Method

Preparation of Cake

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) to ensure it is hot enough to bake the cakes evenly.

  2. 2

    Prepare Ramekins

Grease four ramekins (6 oz each) with butter and dust with flour to prevent the cakes from sticking.

  3. 3

    Melt Butter and Chocolate

In a microwave-safe bowl, combine the unsalted butter and semi-sweet chocolate. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.

  4. 4

    Mix Eggs and Sugar

In a large mixing bowl, whisk together the eggs, egg yolks, and granulated sugar until the mixture is pale and thick, about 2-3 minutes.

  5. 5

    Combine Mixtures

Gradually pour the melted chocolate mixture into the egg and sugar mixture, whisking continuously until well combined.

  6. 6

    Add Dry Ingredients

Gently fold in the all-purpose flour, vanilla extract, and a pinch of salt until just combined. Be careful not to overmix.

  7. 7

    Fill Ramekins

Evenly divide the batter among the prepared ramekins, filling each about three-quarters full.

  8. 8

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  9. 9

    Cool Slightly

Remove the ramekins from the oven and let them cool for 1 minute before inverting onto serving plates.

Serving

  1. 10

    Serve

Carefully lift each cake out of its ramekin and invert onto a plate. Serve warm with a scoop of vanilla ice cream and drizzle with chocolate sauce if desired.
