Prepare the crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs and sugar. Melt butter and mix in until combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until lightly golden. Remove from the oven and cool.

Prepare the filling
In a large mixing bowl, beat the cream cheese until smooth using an electric mixer. Gradually add the sugar and beat until combined. Mix in the sour cream and vanilla extract until fully combined. Add the eggs one at a time, mixing well after each addition. Finally, add the flour and mix until just combined.

Bake the cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside with the door ajar for an hour to cool gradually. This helps prevent cracking.
Chilling and Serving

Chill the cheesecake
Once cooled, remove the cheesecake from the oven and refrigerate for at least 4 hours, or overnight for best results. Before serving, top with fresh strawberries and whipped cream if desired.
