    Trim and Halve the Brussel Sprouts

    Begin by rinsing the brussel sprouts under cold water. Trim the stem ends and remove any yellow or damaged leaves. Cut each sprout in half lengthwise.

    Dice the Pancetta

    While the brussel sprouts are being prepared, dice the pancetta into small pieces.

    Cook the Pancetta

    In a large skillet over medium heat, add the diced pancetta. Cook for about 5-7 minutes, stirring occasionally, until it is crispy and golden brown. Remove the pancetta from the skillet and set aside, leaving the drippings in the pan.

    Sauté the Brussel Sprouts

    In the same skillet with the pancetta drippings, add the olive oil. Once heated, add the halved brussel sprouts cut side down. Sprinkle with salt and black pepper. Sauté for about 8-10 minutes, or until the sprouts are tender and caramelized.

    Combine Ingredients

    Once the brussel sprouts are cooked, return the crispy pancetta to the skillet and stir to combine. Cook for an additional 2 minutes.

    Finish with Parmesan

    Remove the skillet from heat and sprinkle the grated Parmesan cheese over the top of the brussel sprouts and pancetta mixture. Toss gently to combine.
