Lemon Butter Sauce

Method

Prepare the Salmon

  1. 1

    Marinate the Salmon

In a bowl, mix the olive oil, salt, black pepper, and lemon juice. Add the salmon fillets and coat them well. Let them marinate for at least 15 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat while the salmon is marinating.

Cook the Vegetables

  1. 3

    Prepare the Vegetables

Wash and cut the asparagus, bell peppers, and zucchini into bite-sized pieces. Mince the garlic.

  2. 4

    Grill the Vegetables

Toss the prepared vegetables with olive oil, salt, and pepper. Place them on the grill when the salmon is cooking, and grill for about 5-7 minutes, turning occasionally until tender.

Grill the Salmon

  1. 5

    Grill the Salmon

Place the marinated salmon fillets on the grill skin-side down. Grill for about 6-8 minutes per side, depending on thickness, until the salmon is cooked through and flakes easily with a fork.

Make the Lemon Butter Sauce

  1. 6

    Prepare the Sauce

In a small saucepan, melt the butter over low heat. Once melted, stir in the lemon zest and chopped parsley. Cook for an additional minute, then remove from heat.

Serve the Dish

  1. 7

    Plate the Dish

On a serving plate, place a grilled salmon fillet alongside the grilled seasonal vegetables. Drizzle with the lemon butter sauce before serving.
