Preparing the Marinara Sauce

Sauté the Garlic
Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Add Tomatoes and Seasonings
Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, and black pepper. Bring to a simmer.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally.
Frying the Calamari

Prepare the Coating
In a large bowl, combine 1 cup of all-purpose flour, 1 cup of cornstarch, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of cayenne pepper.

Heat the Oil
In a deep fryer or large heavy pot, heat 4 cups of oil to 375°F (190°C).

Coat the Calamari
Dredge the calamari rings in the flour mixture until fully coated.

Fry the Calamari
Carefully add the coated calamari to the hot oil in batches, avoiding overcrowding. Fry for about 2-3 minutes until golden brown.

Drain and Serve
Remove the fried calamari with a slotted spoon and place on a paper towel-lined plate to drain excess oil. Serve hot with the marinara sauce.
