Prepare the Tomatoes
Wash and slice the green tomatoes into 1/4-inch thick slices. Set aside.

Set Up Breading Station
In three separate bowls, place the flour in the first, buttermilk in the second, and a mixture of cornmeal, salt, black pepper, and cayenne pepper in the third.

Bread the Tomatoes
Dip each tomato slice into the flour, covering both sides, then into the buttermilk, and finally into the cornmeal mixture. Ensure each slice is well-coated.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.

Fry the Tomatoes
Carefully add the breaded tomato slices to the hot oil. Fry for 3-4 minutes on each side until golden brown. Do not overcrowd the pan. Remove and place on paper towels to drain excess oil.
Spicy Remoulade

Combine Ingredients
In a medium bowl, combine the mayonnaise, Dijon mustard, hot sauce, chopped capers, fresh parsley, and lemon juice.

Mix Well
Stir well until all ingredients are fully incorporated and the sauce is smooth.

Taste and Adjust
Taste the remoulade and adjust seasonings if necessary, adding more hot sauce for heat or lemon juice for tang.
