Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Set Up Breading Station
In three separate bowls, place the flour in the first bowl, the beaten egg mixed with milk in the second bowl, and the bread crumbs mixed with salt, black pepper, and cayenne pepper in the third bowl.

Bread the Calamari
Dredge each calamari ring in flour, shaking off the excess, then dip it into the egg mixture, and finally coat it with the breadcrumb mixture. Press the breadcrumbs onto the calamari to ensure even coating.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the breaded calamari in batches to the hot oil. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Spices
Stir in the crushed tomatoes, oregano, basil, sugar, salt, and black pepper. Bring the sauce to a simmer.

Simmer the Sauce
Reduce heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Serve
Remove the sauce from heat and serve warm alongside the crispy calamari.
