Method

Preparation

  1. 1

    Preheat the oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with cocoa powder to prevent sticking.

  2. 2

    Melt the chocolate and butter

In a microwave-safe bowl, combine the unsalted butter and semi-sweet chocolate. Microwave in 30-second intervals, stirring in between, until melted and smooth. Allow to cool slightly.

  3. 3

    Mix the dry ingredients

In a separate bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking powder, and salt until well combined.

  4. 4

    Combine wet and dry ingredients

In the bowl with melted chocolate and butter, add in the eggs, egg yolks, and vanilla extract. Whisk until smooth. Gradually fold in the dry ingredients until just combined.

Baking

  1. 5

    Fill the ramekins

Divide the batter evenly among the greased ramekins, filling each about 3/4 full.

  2. 6

    Bake the cakes

Bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is soft and jiggly.

  3. 7

    Cool slightly

Remove from the oven and let the cakes cool for 1 minute before running a knife around the edges to loosen.

  4. 8

    Invert and serve

Carefully invert the ramekins onto individual plates. Dust with powdered sugar and serve with a scoop of vanilla ice cream.
