Prepare the Mahi Mahi

Dry the Fish
Pat the mahi mahi fillets dry with paper towels to remove excess moisture. This helps achieve a better sear.

Rub the blackening seasoning evenly over both sides of each mahi mahi fillet.

Cook the Fish
Add the seasoned mahi mahi fillets to the skillet. Cook for about 3-4 minutes on each side, or until the fish is cooked through and has a nice blackened crust. Remove from skillet and let rest.

In a large bowl, combine shredded cabbage, grated carrot, and chopped cilantro.

Dress the Slaw
Drizzle lime juice over the cabbage mixture and sprinkle with salt. Toss to combine until the cabbage is well coated with the dressing.
Assemble Tacos

Warm Tortillas
Warm the corn tortillas in a dry skillet or microwave until pliable.

Place a piece of blackened mahi mahi on each tortilla, followed by a generous amount of cabbage slaw and slices of avocado.

Serve with lime wedges on the side for squeezing over the tacos before eating.
