Cook the Omelet
Heat the olive oil in a non-stick skillet over medium heat. Pour the whisked eggs into the skillet, tilting the pan to ensure the eggs cover the bottom evenly.

Add Fillings
Once the edges start to set, add the oven-dried tomatoes, arugula, prosciutto cotto, and pieces of stracchino cheese on one half of the omelet.

Fold and Finish
Carefully fold the omelet in half over the fillings and cook for another 2-3 minutes, or until the cheese is melted and the eggs are fully cooked. Slide the omelet onto a plate.

Serve immediately, garnished with additional arugula if desired.
