Prepare the Chicken
Preheat your grill or skillet over medium-high heat. Season the chicken breasts with olive oil, salt, and black pepper.

Cook the Chicken
Place the seasoned chicken breasts on the grill or skillet and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C).

Add Pancetta and Cheese
During the last few minutes of cooking, top each chicken breast with a slice of pancetta and a generous amount of smoked mozzarella cheese. Cover the grill or skillet to allow the cheese to melt.

Prepare the Tomato
While the chicken is cooking, slice the tomato and set aside.

Assemble the Dish
Once the chicken is cooked and the cheese has melted, remove from heat. On each plate, place a serving of arugula, then top with the chicken, melted cheese, pancetta, and slices of tomato. Drizzle piquillo pepper aioli over the top.
