    Prepare the Pancetta

    In a skillet over medium heat, add the pancetta and cook until crispy. Remove from the pan and set aside, leaving the fat in the pan.

    Fry the Sage

    In the same skillet, add the fresh sage leaves and fry until crispy, about 1-2 minutes. Remove and set aside.

    Make the Truffle Cream Sauce

    In the skillet, add the heavy cream and bring to a simmer. Stir in the truffle oil, and season with salt and black pepper to taste. Let it thicken for about 3-5 minutes.

    Cook the Gnocchi

    In a large pot of salted boiling water, cook the potato gnocchi according to package instructions until they float to the surface. Drain and add to the skillet with the truffle cream sauce.

    Combine and Serve

    Gently toss the gnocchi in the sauce until well coated. Serve topped with crispy pancetta, fried sage, and grated Parmesan cheese.
