Prepare the Potatoes
Preheat your oven to 425°F (220°C). Wash and cut the Russet potatoes into evenly sized fries. Ensure they are about 1/4 inch thick for even cooking.

Season the Fries
In a large bowl, toss the potato fries with olive oil, salt, and black pepper until well coated.

Bake the Fries
Spread the seasoned fries in a single layer on a baking sheet. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.

Prepare the Brown Butter
While the fries are baking, melt butter in a small saucepan over medium heat. Cook until the butter turns a golden brown color and has a nutty aroma. Remove from heat.

Combine and Serve
Once the fries are cooked, remove them from the oven, drizzle with brown butter, and top with Bolognese sauce, Calabrian chili paste, and grated Parmesan cheese. Sprinkle with fresh parsley before serving.
