Preparing the Ribeye
Season the ribeye steak with salt and black pepper on both sides. Heat a skillet over medium-high heat and add olive oil. Once hot, sear the steak for about 3-4 minutes on each side until it reaches desired doneness. Remove from heat and let it rest for 5 minutes before shaving it thinly against the grain.

Caramelizing the Onions
In the same skillet, lower the heat to medium and add the sliced onions. Cook, stirring occasionally, until the onions are soft and caramelized, about 15-20 minutes. Add the sliced peppadew peppers to the onions and cook for an additional 5 minutes.

Assembling the Dish
In a serving platter, layer the shaved ribeye, followed by the caramelized onions and peppadew peppers. Sprinkle the shredded fontina cheese on top. If desired, place under a broiler for 2-3 minutes to melt the cheese slightly.

Serve with garlic aioli on the side and warm beef broth for dipping. Enjoy your shaved ribeye with a side of your choice!
