Sea Bass Milanese

Method

Cooking the Sea Bass

  1. 1

    Prepare the Fish

Season the sea bass fillets with salt and black pepper on both sides.

  2. 2

    Set Up Breading Station

Set up a breading station with three shallow plates: one with flour, one with beaten eggs, and one with panko breadcrumbs.

  3. 3

    Bread the Fillets

Dredge each fillet in flour, shaking off excess, then dip into the beaten eggs, and finally coat with panko breadcrumbs.

  4. 4

    Cook the Fillets

In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded sea bass fillets and cook for 3-4 minutes on each side until golden brown and cooked through.

  5. 5

    Serve

Remove the fillets from the skillet and drain on paper towels. Serve immediately with the lemon caper aioli on the side.
