Cook the Orecchiette
Bring a large pot of salted water to a boil. Add the orecchiette pasta and cook according to package instructions until al dente, usually about 10-12 minutes. Reserve about 1 cup of pasta water, then drain the pasta.

Sauté the Prosciutto
In a large skillet over medium heat, add the olive oil. Once hot, add the prosciutto sausage, breaking it up into smaller pieces as it cooks. Sauté until it is browned and crispy, about 5-7 minutes.

Add Watercress and Chili Flakes
Add the watercress and chili flakes to the skillet with the prosciutto. Sauté for another 2-3 minutes until the watercress is wilted.

Combine with Pasta
Add the drained orecchiette to the skillet. Toss everything together, adding reserved pasta water as needed to help combine and create a sauce. Season with salt and black pepper to taste.

Serve
Plate the pasta and sprinkle generously with grated pecorino cheese. Serve immediately.
