Prepare the Dough
In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until foamy. In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until the dough starts to come together.

Knead the Dough
On a floured surface, knead the dough for about 5-7 minutes until it becomes smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Coccoli
Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out to about 1/2 inch thickness. Use a round cutter to cut out circles of dough.

Fry the Coccoli
In a deep frying pan, heat the vegetable oil over medium heat. Fry the dough circles in batches until golden brown and crispy, about 2-3 minutes on each side. Remove and drain on paper towels.

Assemble the Dish
To serve, top each coccoli with a generous portion of stracchino cheese, a slice of prosciutto di Parma, and drizzle with truffle honey.
