Preheat your oven to 200°C (400°F). Cut the cauliflower into florets and steam them until tender, about 5-7 minutes. Drain and set aside.

In a saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant. Pour in the heavy cream and bring to a gentle simmer. Add the Taleggio cheese and stir until melted and smooth. Season with salt and black pepper.

In a bowl, combine breadcrumbs, chopped parsley, lemon zest, and olive oil. Mix well until the breadcrumbs are coated.

In a baking dish, place the steamed cauliflower florets. Pour the Taleggio fonduta over the cauliflower, ensuring it is well-coated. Sprinkle the gremolata breadcrumbs evenly on top.
