    Prepare the Dough

    Preheat your oven to 475°F (245°C). Roll out the pizza dough on a floured surface to your desired thickness and shape.

    Prepare the Toppings

    Thinly slice the fingerling potatoes and cook them in salted boiling water for about 5 minutes until slightly tender. Drain and set aside.

    Cook the Pancetta

    In a skillet, heat the olive oil over medium heat. Add the pancetta bacon and cook until crispy. Remove and drain on paper towels.

    Make the Roasted Garlic Cream

    In a small saucepan, combine roasted garlic and heavy cream. Heat gently and mash the garlic into the cream. Season with salt and pepper to taste.

    Assemble the Pizza

    Spread the roasted garlic cream over the pizza dough. Evenly distribute the cooked fingerling potatoes, fireball pepperoni, and pancetta on top. Create small wells and crack the eggs into them. Sprinkle mozzarella cheese over everything.

    Bake the Pizza

    Transfer the pizza to the oven and bake for 12-15 minutes or until the crust is golden and the eggs are cooked to your liking.

    Remove the pizza from the oven, sprinkle with fresh chives, and season with additional salt and pepper if desired. Slice and serve hot.
