    Prepare the Hen of the Woods

    Preheat the oven to 400°F (200°C). Clean the hen of the woods mushroom thoroughly and trim the base if necessary.

    Season the Mushroom

    In a bowl, mix olive oil, chorizo spice blend, salt, and black pepper. Rub this mixture all over the mushroom, ensuring it is well coated.

    Roast the Mushroom

    Place the seasoned mushroom in a roasting pan and roast in the preheated oven for 30-35 minutes or until golden brown and tender.

    Prepare Fermented Potatoes

    While the mushroom roasts, prepare the fermented potatoes. If not already prepared, you can ferment boiled potatoes for 3-5 days in a jar with water and salt. Once ready, drain and set aside.

    Make the Spruce Vinegar Jelly

    In a small saucepan, heat the water until warm. Sprinkle in the gelatin powder and stir until dissolved. Add spruce vinegar and mix well. Pour into a mold and refrigerate until set.

    Serve

    Once the mushroom is roasted, remove it from the oven and let it rest for a few minutes. Serve the whole roasted hen of the woods with fermented potatoes on the side and top with spruce vinegar jelly.
