    Prepare the Eggs

    Preheat a water bath or sous vide circulator to 63°C (145°F). Place the eggs carefully in the water bath and cook for 7 hours.

    Char the Carrots

    While the eggs are cooking, peel and slice the carrots into sticks. Heat 2 tablespoons of olive oil in a skillet over medium-high heat, add the carrots, and cook until charred and tender, about 10-15 minutes. Season with salt and pepper.

    Prepare Garlic Chips

    Thinly slice the garlic cloves. In a small pan, heat 1 tablespoon of olive oil over low heat. Add the garlic slices and cook until golden and crispy, about 3-5 minutes. Remove and drain on a paper towel.

    Assemble the Dish

    Once the eggs are done, carefully crack them open and place them in a bowl. Add the charred carrots, sliced avocado, crumbled feta cheese, garlic chips, chopped cilantro, and pickled onions on top. Drizzle with additional olive oil and season with salt and pepper to taste.
