    Cook Quinoa

    Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed. Remove from heat and let it sit covered for 5 minutes, fluff with a fork.

    Prepare the Tofu

    Press the tofu to remove excess moisture, then cut into cubes. Heat 1 tablespoon of sesame oil in a skillet over medium-high heat. Add the tofu cubes and sauté until golden brown on all sides. Remove from skillet and set aside.

    Cook the Vegetables

    In the same skillet, add another tablespoon of sesame oil. Add minced garlic and sauté for about 30 seconds. Add broccoli florets and Brussels sprouts, and stir-fry for about 5-7 minutes until tender-crisp.

    Combine Ingredients

    Add the sautéed tofu back into the skillet with the vegetables. Pour in hoisin sauce and soy sauce, stirring to coat all ingredients evenly. Cook for an additional 2-3 minutes until heated through.

    Serve

    Serve the hoisin tofu and vegetable mixture over a bed of quinoa. Garnish with sesame seeds and sliced green onions.
