    Prepare the Sauce

    In a bowl, mix together ketchup, rice vinegar, soy sauce, sugar, cornstarch, water, salt, and pepper until well combined. Set aside.

    Stir-fry the Vegetables

    Heat a large skillet or wok over medium-high heat. Add a little oil and stir-fry the onions, bell peppers, and carrots for about 3-4 minutes until they start to soften.

    Add Remaining Ingredients

    Add the pineapple, cucumbers, and tomatoes to the skillet. Stir-fry for another 2-3 minutes until everything is heated through.

    Combine with Sauce

    Pour the sweet and sour sauce over the stir-fried vegetables. Stir well to coat and cook for an additional 2-3 minutes until the sauce thickens slightly.

    Remove from heat and serve hot over rice or noodles if desired.
