Prepare the Rice Noodles
Soak the rice noodles in warm water for about 30 minutes or until softened. Drain and set aside.

Sauté the Aromatics
In a large skillet or wok, heat the vegetable oil over medium heat. Add the sliced onion and garlic, and sauté until translucent, about 3-4 minutes.

Add the Noodles
Add the soaked rice noodles to the skillet, tossing to combine with the onion and garlic.

Add the Sauce
In a small bowl, mix the tamarind paste, soy sauce, and brown sugar until well combined. Pour over the noodles and stir-fry for 2-3 minutes, ensuring everything is well coated.

Finish with Vegetables
Add the bean sprouts and chopped green onions, tossing everything together for another 2 minutes.

Serve hot, garnished with ground peanuts and lime wedges on the side.
