Marinate the Chicken Wings
In a large bowl, combine soy sauce, fish sauce, lime juice, minced garlic, minced ginger, and brown sugar. Whisk until the sugar is dissolved. Add the chicken wings to the marinade, coat well, and let it marinate in the refrigerator for at least 2 hours or overnight for best results.

Prepare the Coating
In a separate bowl, mix together cornstarch, all-purpose flour, and black pepper. This will be the coating for the wings.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Wings
Remove the marinated wings from the refrigerator. Shake off excess marinade, then dredge them in the flour mixture until evenly coated.

Carefully place the coated wings in the hot oil in batches. Fry them for about 8-10 minutes or until golden brown and crispy. Ensure they are cooked through.
