Prepare the Filling
In a large skillet, heat a tablespoon of vegetable oil over medium heat. Add minced garlic and sauté until fragrant. Add the chopped mushrooms, cabbage, and carrots. Stir-fry for about 5 minutes until the vegetables are tender.

Assemble the Rolls
Lay a spring roll wrapper on a clean surface. Place about 2 tablespoons of the vegetable filling on the lower third of the wrapper. Fold the sides inward and roll tightly from the bottom to the top. Seal the edge with a little water.

Repeat with the remaining wrappers and filling.

Fry the Rolls
In a deep pan or fryer, heat vegetable oil to 350°F (175°C). Carefully add the rolls in batches, frying until golden brown and crispy, about 3-4 minutes per side.

Remove the rolls and drain on paper towels.
