Prepare the Filling
In a skillet, cook the ground pork over medium heat until fully cooked. Add the shrimp and cook until pink and opaque. Remove from heat and let cool.

Prep the Vegetables
While the meat is cooling, julienne the carrot and rinse the bean sprouts. Prepare the cilantro and lettuce leaves.

Soften the Rice Paper
Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it softens. Lay it flat on a clean surface.

Assemble the Rolls
On the softened rice paper, place a small amount of cooked shrimp and pork mixture, some rice noodles, julienned carrots, bean sprouts, cilantro, and a lettuce leaf. Fold the sides of the rice paper over the filling, then roll tightly from the bottom up. Repeat with remaining ingredients.

Arrange the fresh Thai rolls on a serving platter and serve with house sauce for dipping.
