Prepare the Filling
In a large bowl, combine ground pork, chopped cabbage, grated carrot, green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are thoroughly combined.

Fill the Dumplings
Take a dumpling wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges of the wrapper with water, fold it over to create a half-moon shape, and pinch the edges to seal tightly. Repeat until all the filling is used.

Cooking the Dumplings
To steam: Place dumplings in a steamer basket lined with parchment paper and steam for about 15-20 minutes. To fry: Heat a non-stick skillet with a little oil, add dumplings, and fry until the bottom is golden brown. Add a little water to the skillet and cover to steam for about 5-7 minutes.

Make the Ginger Soy Sauce
In a small bowl, combine soy sauce, grated ginger, and a splash of sesame oil. Mix well and serve as a dipping sauce.
