    In the same pot, add the chopped onions, minced garlic, sliced carrots, and chopped celery. Sauté the vegetables for about 5-7 minutes until they are soft and the onions are translucent.

    Stir in the tomato paste and cook for an additional 2 minutes. Then, pour in the beef broth and scrape the bottom of the pot to release any browned bits.

    Add the bay leaves, dried thyme, salt, and black pepper to the pot. If using, add the red wine at this stage.

    Return the seared oxtails to the pot, ensuring they are submerged in the liquid.
