Prepare the Mutton
Rinse the mutton pieces under cold water and pat dry with paper towels. Cut the mutton into manageable pieces if not already done.

Chop Vegetables
Finely chop the onions and set aside. Puree the tomatoes in a blender until smooth.

Add Spices
Add the ginger-garlic paste and sauté for another 2 minutes. Then, add salt, black pepper, turmeric powder, cumin powder, red chili powder, and garam masala. Stir well to combine.

Cook Mutton
Add the mutton pieces to the pot and brown them on all sides, ensuring the spices coat the meat well.

Add Tomatoes and Water
Once the mutton is browned, add the pureed tomatoes and mix well. Pour in the water and bring the mixture to a boil.

Simmer
Reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, or until the mutton is tender. Stir occasionally and add more water if necessary.

Add Green Chilies
About 10 minutes before the mutton is done, add the slit green chilies and stir well.
