Directions for Preparing Eggs Benedict

    Prepare the Asparagus

    Trim the ends of the asparagus and blanch in boiling water for about 2-3 minutes until tender. Drain and set aside.

    Make the Hollandaise Sauce

    In a double boiler, whisk together the egg yolks, lemon juice, and a pinch of salt. Gradually add melted butter while whisking continuously until the sauce thickens. Season with black pepper to taste.

    Cook the Eggs

    Bring a pot of water to a gentle simmer and add a pinch of salt. Crack each egg into a small bowl and gently slide into the water. Cook for 3-4 minutes or until whites are set but yolks remain runny. Remove with a slotted spoon.

    Assemble the Dish

    Place a biscuit on a plate, top with a slice of smoked ham, then carefully place the poached egg on top. Drizzle with hollandaise sauce and serve with roasted asparagus on the side.
