Prepare Ginger Syrup
Peel and chop the fresh ginger root into small pieces. In a saucepan, combine the chopped ginger, granulated sugar, and water. Bring to a boil over medium heat, stirring until the sugar is dissolved. Reduce heat and let simmer for 20 minutes.

Strain the Syrup
After simmering, remove the saucepan from heat and let the ginger syrup cool for 10 minutes. Strain the syrup through a fine mesh sieve into a bowl to remove ginger pieces. Set aside.

Mix the Flavors
In a large pitcher, combine the strained ginger syrup, grapefruit juice, cherry juice, and lemon juice. Stir well to combine all the flavors.

Add Carbonation
Just before serving, add the bicarbonate of soda to the mixture and stir gently. This will create a fizzy effect.

Serve
Fill glasses with ice cubes, pour the Wisco Pop mixture over the ice, and garnish with fresh mint leaves. Enjoy your refreshing homemade Wisco Pop!
