Directions

  1. 1

    Prepare the Ingredients

Chop the bell peppers and onion into small pieces. Dice the corned beef into small cubes.

  2. 2

    Cook the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell peppers. Sauté until softened, about 5 minutes.

  3. 3

    Add the Corned Beef

Add the diced corned beef to the skillet. Cook for an additional 5-7 minutes, stirring occasionally until the beef is heated through and begins to crisp.

  4. 4

    Mix in the Roasted Potatoes

Stir in the roasted potatoes, and season with salt and pepper. Cook for another 5 minutes until everything is heated and combined.

  5. 5

    Cook the Eggs

In a separate pan, cook the cage-free eggs to your liking (fried, scrambled, or poached).

  6. 6

    Prepare the Sriracha Horseradish Cream

In a small bowl, mix the sriracha and horseradish cream together until well combined.

  7. 7

    Plate and Serve

Serve the corned beef hash on a plate, top with the cooked eggs, and garnish with salad greens. Drizzle the sriracha horseradish cream over the top.
