Prepare the Philly Cheesecake Layer

Mix the Cheesecake

In a mixing bowl, blend the cream cheese, granulated sugar, and vanilla extract until smooth. Gradually add the heavy cream and mix until fully incorporated and fluffy.

Make the Brown Butter Graham Crust

Prepare the Crust

In a skillet, melt the unsalted butter over medium heat, stirring until it turns golden brown and has a nutty aroma. In a bowl, combine graham cracker crumbs, brown sugar, and salt. Pour the brown butter into the mixture and stir until crumbly.

Bake the Crust

Press the crumb mixture into the bottom of a serving dish to form an even layer. Bake in a preheated oven at 350°F (175°C) for 10 minutes. Allow to cool.

Toast the Almonds

Toast the Almonds

In a dry skillet, toast the sliced almonds over medium heat, stirring frequently until golden brown. Remove from heat and set aside.

Assemble the Sundae

Layer the Sundae

In a bowl, layer the baked graham crust, followed by a layer of the Philly cheesecake mixture. Spoon the cherry pie filling over the cheesecake, and top with scoops of Foothill's Creamery soft serve. Finish with a sprinkle of toasted almonds.
