Preparation

  1. 1

    Prepare the Duck Breast

Score the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

  2. 2

    Make the Marinade

In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, salt, and black pepper until well combined.

  3. 3

    Marinate the Duck

Place the duck breasts in a shallow dish and pour the marinade over them. Allow to marinate for at least 30 minutes, or overnight in the refrigerator for more flavor.

  4. 4

    Prepare Watermelon

Cut the watermelon into bite-sized cubes and set aside in a large bowl.

  5. 5

    Prepare Pea Shoots

Rinse the pea shoots under cold water, then gently pat them dry with a clean kitchen towel.

Cooking

  1. 6

    Cook the Duck Breast

Heat a skillet over medium-high heat. Place the duck breasts skin-side down and cook for about 6-8 minutes until the skin is crispy. Flip and cook for another 4-6 minutes until the internal temperature reaches 135°F (medium-rare). Remove from heat and let rest for 5 minutes.

  2. 7

    Slice the Duck

After resting, slice the duck breasts thinly against the grain.

  3. 8

    Combine Ingredients

In a large serving bowl, combine the watermelon cubes, sliced duck, and pea shoots. Toss gently to mix.

Serving

  1. 9

    Garnish and Serve

Plate the watermelon, duck, and pea shoot mixture. Garnish with fresh mint leaves and serve with lime wedges on the side.
