Prepare the Crust
In a medium bowl, combine the graham cracker crumbs and sugar. Pour in the melted butter and mix until the mixture resembles wet sand.

Mix the Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugar and vanilla extract, mixing until well combined.

Add Sour Cream and Eggs
Add the sour cream to the cream cheese mixture and blend until smooth. Add the eggs one at a time, mixing on low speed until just combined.

Bake the Cheesecake
Pour the cheesecake filling over the prepared crust in the springform pan. Bake in a preheated oven at 325°F (160°C) for about 45-50 minutes, or until the center is set and slightly jiggles.

Cool the Cheesecake
Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour. Then refrigerate for at least 4 hours or overnight.

In a blender, combine the chopped strawberries, sugar, and lemon juice. Blend until smooth.

Pour the strawberry mixture into a shallow dish and freeze for about 2-3 hours, stirring every 30 minutes until it reaches a soft-serve consistency.
Golden Lime Sorbet

Prepare the Lime Sorbet
In a saucepan, combine the fresh lime juice, sugar, and water over medium heat. Stir until the sugar dissolves.

Remove from heat and let cool. Pour the mixture into a shallow dish and freeze for about 2-3 hours, stirring every 30 minutes until it reaches a soft-serve consistency.
