Method

Preparing the Tuna

  1. 1

    Slicing the Tuna

Using a sharp knife, slice the fresh sushi-grade tuna into 1-inch thick steaks. Make sure to slice against the grain for optimal tenderness.

  2. 2

    Chilling the Tuna

Wrap the sliced tuna in plastic wrap and place it in the refrigerator to chill while you prepare the marinade.

Making the Marinade

  1. 3

    Combining Ingredients

In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, grated ginger, and minced garlic until well combined.

  2. 4

    Marinating the Tuna

Place the chilled tuna steaks in a shallow dish and pour the marinade over them. Allow the tuna to marinate for at least 15 minutes in the refrigerator.

Sealing the Tuna

  1. 5

    Searing the Tuna

Heat a non-stick skillet over medium-high heat. Once hot, remove the tuna from the marinade, letting excess marinade drip off, and sear the tuna for about 30 seconds on each side for rare, or longer to your desired doneness.

  2. 6

    Coating with Seeds

Immediately after searing, roll the tuna in a mixture of black and white sesame seeds to coat the surface evenly.

Serving the Tuna Tataki

  1. 7

    Plating

Using a sharp knife, slice the seared tuna into thin slices (about ¼ inch thick). Arrange the slices on a plate.

  2. 8

    Garnishing

Sprinkle chopped green onions, add thinly sliced radish, and a handful of microgreens or sprouts on top of the tuna slices for garnish.

  3. 9

    Serving

Serve immediately with any remaining marinade or soy sauce for dipping.
