Sashimi

    Prepare the Fish

    Using a sharp knife, slice the fresh tuna, salmon, and yellowtail into thin, even pieces. Aim for slices about 1/4 inch thick.

    Serve

    Arrange the sashimi slices on a chilled plate. Serve with a side of wasabi and soy sauce for dipping.

Tartare

    Chop Ingredients

    Dice the fresh salmon, avocado, red onion, and chives into small pieces. Mince the capers.

    Mix the Tartare

    In a mixing bowl, combine the diced salmon, avocado, red onion, capers, lemon juice, and chives. Season with salt and black pepper to taste.

    Chill

    Cover the bowl with plastic wrap and refrigerate for about 30 minutes to allow the flavors to meld.

    Serve

    Spoon the tartare mixture onto plates or serve in small bowls with crackers or toast.

Cured & Smoked

    Prepare the Smoked Fish

    Flake the smoked mackerel into bite-sized pieces and arrange on a serving platter. Slice the cured anchovies into smaller pieces.

    Sprinkle fresh dill and lemon zest over the smoked fish. Drizzle with olive oil.

    Serve with Bread

    Serve the smoked mackerel and cured anchovies with slices of crusty bread for spreading.
