Peel the tiger prawns, leaving the tails intact. Devein them by making a shallow cut along the back and removing the black vein. Rinse under cold water and pat dry with paper towels. Season with salt and black pepper. Set aside.
Make the Tempura Batter

In a bowl, combine the all-purpose flour, cornstarch, and salt. Mix well.

In a deep frying pan or wok, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Dip each seasoned prawn into the tempura batter, allowing excess batter to drip off. Carefully place the battered prawn into the hot oil. Fry in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.
