Preparation of Fish

Clean the Fish
Rinse the Shima Aji under cold running water to remove any impurities. Pat dry with paper towels.

Fillet the Fish
Using a sharp filleting knife, carefully fillet the Shima Aji, making sure to remove the skin and bones. Cut each fillet into bite-sized pieces.

Mix the Marinade
In a small bowl, combine the soy sauce, mirin, sake, sesame oil, and grated ginger. Whisk until well blended.

Marinate the Fish
Place the fish fillets into a shallow dish and pour the marinade over them. Cover with plastic wrap and refrigerate for at least 30 minutes.

Preheat a grill or a non-stick pan over medium-high heat.
