Preparing the Squid

Clean and Cut the Squid
Rinse the cleaned squid under cold water. Cut the squid into rings about 1 cm thick. If you have whole squid, make sure to remove the head and insides, then slice into rings.

Season the Cornflour
In a bowl, mix the cornflour with salt and black pepper until well combined. This will be used to coat the squid.
Cooking the Squid

Heat the Oil
In a deep frying pan or wok, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test if the oil is ready by dropping a small amount of cornflour into the oil; it should sizzle immediately.

Coat the Squid
Take the squid rings and coat them evenly in the seasoned cornflour. Shake off any excess flour.

Fry the Squid
Carefully add the coated squid rings to the hot oil in batches. Fry for about 2-3 minutes or until they turn golden brown and crispy. Do not overcrowd the pan.

Drain the Squid
Using a slotted spoon, remove the squid from the oil and place them on paper towels to drain excess oil. Keep warm while you fry the remaining squid.

In a small bowl, combine the soy sauce, rice vinegar, chili flakes, and chopped fresh coriander. Stir well to combine.
