Prepare Sushi Rice

Rinse the Rice
Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes or until the water is absorbed. Remove from heat and let it sit for 10 minutes.

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.

Using a sharp knife, slice the salmon into thin strips or small cubes, depending on your preference.

Place a sheet of nori on a bamboo sushi mat, shiny side down.

Wet your hands to prevent sticking. Take a handful of sushi rice and evenly spread it over the nori, leaving about 1 inch at the top edge.

Roll the Sushi
Using the bamboo mat, carefully lift the edge of the mat and roll the nori away from you, applying gentle pressure to form a tight roll. Continue rolling until you reach the exposed edge of the nori. Use a little water to seal the edge.

With a sharp knife, slice the roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts for cleaner slices.
