Preparation

  1. 1

    Marinating Chicken and Salmon

In a bowl, combine olive oil, garlic powder, salt, pepper, and dried oregano. Add chicken breasts and salmon fillets, ensuring they are well-coated. Let marinate for at least 30 minutes.

  2. 2

    Cooking Brown Rice

Rinse 2 cups of brown rice under cold water. In a pot, combine the rinsed rice with 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for approximately 45 minutes or until water is absorbed.

  3. 3

    Cooking Quinoa

Rinse 2 cups of quinoa under cold water. In a separate pot, combine the rinsed quinoa with 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for approximately 15 minutes or until water is absorbed.

Cooking

  1. 4

    Grilling Chicken and Salmon

Preheat a grill or grill pan over medium heat. Grill the marinated chicken breasts for 6-7 minutes on each side or until cooked through. Grill the salmon fillets for approximately 4 minutes on each side or until flaky.

  2. 5

    Steaming Vegetables

In a steamer basket over boiling water, steam broccoli, carrots, and bell peppers for about 5-7 minutes until tender. Add spinach in the last minute to wilt.

Serving

  1. 6

    Plating the Meal

On each plate, serve a portion of grilled chicken or salmon, a serving of brown rice or quinoa, and a generous helping of steamed vegetables. Garnish with additional olive oil or herbs if desired.
