Prepare Sushi Rice

Rinse and Cook Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and 2 cups of water in a rice cooker and cook according to the manufacturer's instructions.

Season the Rice
Once cooked, transfer the rice to a large bowl. In a small saucepan, heat rice vinegar, sugar, and salt over low heat until dissolved. Pour the mixture over the rice and gently fold to combine. Allow the rice to cool to room temperature.

Peel and devein the prawns, leaving the tails on. Pat them dry with a paper towel.

In a mixing bowl, combine the tempura batter mix with cold water. Stir until just combined; do not over-mix.

In a deep pan or fryer, heat vegetable oil to 350°F (175°C).

Fry the Prawns
Dip the prawns into the tempura batter, allowing excess to drip off, and carefully place them in the hot oil. Fry until golden and crispy, about 2-3 minutes. Remove and drain on paper towels.

Lay Out Nori
Place a nori sheet on a bamboo sushi mat, shiny side down.

Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently to form a tight roll. Seal the edge with a little water.
