Method

Dough Preparation

  1. 1

    Mix Dough

In a large mixing bowl, combine the all-purpose flour and salt. Gradually add water while mixing until a dough forms.

  2. 2

    Knead Dough

Knead the dough on a floured surface for about 5-7 minutes until it is smooth and elastic.

  3. 3

    Rest Dough

Cover the dough with a damp cloth and let it rest for 30 minutes.

Filling Preparation

  1. 4

    Prepare Filling

In a food processor, combine the prawns, lemongrass, garlic, ginger, green onions, soy sauce, sesame oil, and black pepper. Pulse until the mixture is well combined but still slightly chunky.

  2. 5

    Chill Filling

Transfer the filling to a bowl and refrigerate for 15 minutes to firm up.

Gyoza Assembly

  1. 6

    Roll Dough

Divide the rested dough into small balls (about 1 inch in diameter). Roll each ball into a thin circle, approximately 3 inches in diameter.

  2. 7

    Fill and Seal Gyoza

Place about 1 tablespoon of filling in the center of each dough circle. Moisten the edges with water, fold over, and pinch to seal tightly.

Cooking

  1. 8

    Pan-fry Gyoza

Heat a large skillet over medium heat. Add a little oil, then arrange the gyoza in a single layer. Cook for 2-3 minutes until the bottoms are golden brown.

  2. 9

    Steam Gyoza

Add about 1/4 cup of water to the skillet and cover immediately. Steam the gyoza for about 5 minutes until the water has evaporated.

  3. 10

    Crisp Gyoza

Remove the lid and cook for an additional 2 minutes to crisp the bottom again.

Dipping Sauce Preparation

  1. 11

    Make Dipping Sauce

In a small bowl, combine soy sauce, rice vinegar, chili oil, and sesame seeds. Mix well.
