Preparation of Sushi Rice

    Place 1 cup of sushi rice in a bowl and rinse under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.

    Add the rinsed rice to a rice cooker with 1 1/4 cups of water. Cook according to the manufacturer's instructions until the rice is tender.

    Season the Rice

    In a small bowl, mix 2 tablespoons of rice vinegar, 1 teaspoon of sugar, and 1 teaspoon of salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.

Slicing the O-Toro

    Prepare the O-Toro

    Using a sharp knife, slice the O-Toro into 1/4-inch thick pieces, ensuring you cut against the grain to maintain tenderness.

Assembling the Dish

    Form Rice Balls

    Wet your hands with water to prevent sticking. Take a small amount of sushi rice and form it into an oval shape, about the size of your palm.

    Top with O-Toro

    Place a slice of O-Toro on top of each rice ball. Optionally, add a small dab of wasabi on top of the fish.

    Arrange the O-Toro sushi on a plate. Serve with soy sauce and pickled ginger on the side.
