Prepare Sushi Rice

Rinse the Rice
Place sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear, about 2-3 minutes.

Cook the Rice
In a medium saucepan, combine rinsed sushi rice and 2.5 cups of water. Bring to a boil over medium heat. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes. Remove from heat and let sit, covered, for an additional 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt. Microwave the mixture for 30 seconds or until sugar dissolves. Transfer the cooked rice to a large bowl, drizzle the vinegar mixture over the rice, and gently fold to combine. Allow the rice to cool to room temperature.
Assemble Nigiri

Shape the Rice
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 1-2 tablespoons) and form it into an oval shape, about 1-2 inches long.

Add Topping
Place a slice of your chosen sashimi-grade fish on top of the shaped rice. If desired, add a small dab of wasabi between the rice and fish.

Repeat
Repeat the process until you have assembled 8 pieces of nigiri.

Serve
Arrange the nigiri on a serving platter. Serve with soy sauce and pickled ginger on the side.
