Start by boiling a pot of water. Add salt and lobsters, and cook for about 5-7 minutes until the shells turn bright red. Remove the lobster and let it cool. Once cool, carefully remove the lobster meat from the shells and slice into bite-sized pieces. Season with black pepper.

In a mixing bowl, combine the all-purpose flour, cornstarch, and baking powder. In another bowl, whisk the egg and then add the ice-cold water. Gradually mix the wet ingredients into the dry ingredients until just combined. Avoid overmixing to keep the batter light and airy.

Fry the Lobster
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Dip each piece of lobster into the tempura batter, allowing excess batter to drip off, then carefully place it in the hot oil. Fry for about 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
