Prepare the Hollandaise Sauce
In a heatproof bowl, whisk the egg yolks and lemon juice together until pale and thick. Place the bowl over a pot of simmering water (double boiler) and slowly drizzle in the melted butter while whisking constantly until the sauce thickens. Add salt and a pinch of cayenne pepper, whisk to combine, then remove from heat.

Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide each egg into the simmering water. Poach for about 3-4 minutes, until the whites are set but the yolks are still runny. Remove with a slotted spoon and set on a paper towel to drain.

Toast the English Muffins
While the eggs are poaching, toast the split English muffins until golden brown.
