Method

Preparation

  1. 1

    Clean the Fish

Rinse the Kinmedai (Golden Eye Snapper) under cold water and pat dry with paper towels. Ensure the fish is scaled and gutted.

  2. 2

    Prepare the Marinade

In a bowl, whisk together soy sauce, mirin, sesame oil, grated ginger, and minced garlic until well combined.

Marinating

  1. 3

    Marinate the Fish

Place the cleaned Kinmedai in a shallow dish and pour the marinade over the fish. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse.

Cooking

  1. 4

    Prepare the Grill or Oven

Preheat your grill to medium-high heat or your oven to 375°F (190°C).

  2. 5

    Cook the Fish

If grilling, place the fish directly on the grill grates and cook for about 6-8 minutes on each side, or until the fish flakes easily with a fork. If baking, place the fish on a lined baking sheet and bake for about 20 minutes.

Serving

  1. 6

    Garnish and Serve

Once cooked, remove the fish from the grill or oven. Sprinkle with chopped green onions and toasted sesame seeds. Serve with lemon wedges on the side.
